QUICK SPONGE CAKE 
1 1/4 c. sifted cake flour
1 c. sugar
1/2 tsp. salt
1 tsp. baking powder
6 eggs
1/4 c. cold water or orange juice
1 tsp. vanilla

Separate eggs. Sift dry ingredients in small bowl. In center of dry ingredients put egg yolks, water or orange juice, vanilla. Beat medium speed 1 minute.

Beat in large bowl, egg whites with 1 teaspoon cream of tartar. High speed until soft mounds form. Slowly add 1/2 cup sugar.

Beat until stiff peaks. Fold egg yolk mixture into white, 1/4 at a time. Bake 350 degrees for 45 to 50 minutes.
