TURKEY A L'ORANGE | |
1 (about 1 lb.) pkg. fresh turkey breast tenderloins 1 tbsp. firmly packed brown sugar 2 tsp. cornstarch 1/2 c. orange juice 1 tsp. butter Fresh orange slices for garnish 1 tbsp. brandy (optional) Place tenderloins on broiler pan; broil 5 inches from heat for 10 minutes. Turn. Boil 10 minutes more. Meanwhile, combine sugar and cornstarch in saucepan. Add juices and butter. Cook, stirring constantly, on medium until thickened. Pour over cooked turkey. Serve. Makes 2-4 servings. Recipe is written for large tenderloins (2 per package). If small tenderloins (4 per package) are used, decrease total cooking time to 10 minutes. Do not overcook turkey! Heat brandy in small pan over low heat until it begins to sizzle along sides of pan when tilted. Remove from heat. Using a long match, light brandy; pour over sauce-covered tenderloins. |
