CHICKEN CACCIATORE 
1 lb. boneless chicken
1/2 c. chopped onion
3 garlic clove, minced
2 tbsp. oil
1 (28 oz.) can tomatoes
1 (8 oz.) can tomato sauce
1 tbsp. salt
1/2 tbsp. oregano
1/2 tbsp. basil
1/8 tbsp. ground red pepper
1 c. green pepper strips
1 1/2 c. minute rice

Or use 1 (16 ounce) spaghetti sauce and 1 1/4 cups water.

Cut chicken in strips, brown lightly with onion and garlic in oil. Add tomatoes and sauce seasonings and green pepper. Bring to full boil. Stir in rice. Cover. Remove from heat and let stand 5 minutes. Stir before serving. Makes four servings.
