FLANKED STEAK WITH SHERRIED
MUSHROOMS
 
2 tbsp. sweet unsalted butter
1 lb. fresh mushrooms, sliced
1/4 c. chopped onion
1/3 c. dry sherry
1 lb. flank steak
Parsley sprigs

Melt 2 tablespoons butter in a large skillet over medium heat. Add mushrooms and onion; saute, stirring occasionally until tender and most of the mushroom liquid evaporates. Stir in sherry and keep warm over low heat.

Broil steak 8 to 10 minutes on each side or until desired doneness. Cut into thin slices at an angle across grain. Serve topped with sherry mushroom mixture and garnish with parsley sprigs, if desired. Makes 4 servings.
