SQUASH CASSEROLE 
8 to 10 yellow squash
Salt
Pepper
1 stick of butter
1 pkg. Ritz crackers
1 c. med. cheddar cheese
1/2 c. milk
1 onion, cooked in microwave

Cut squash into slices and cook well; drain; mash up. Add salt and pepper to taste. Mix squash, butter and package of Ritz crackers (save a few), crushed up, cheese, milk and onion. Put into casserole dish and crush the remaining crackers on top and bake at 375 degrees for 45 minutes to 1 hour (or until edges are brown).

Since microwave ovens vary in power, you may need to adjust your cooking time.
