THREE-LAYER MEXICAN PIE 
1 lb. ground beef or mild sausage
2 (15 oz) cans refried beans
1 envelope taco seasoning mix
2 c light sour cream
1 lb. sharp cheddar cheese, shredded

Brown the beef in a skillet, stirring until crumbly; drain well. Add the beans and seasoning mix and mix well. Spread in a 9 x 13 baking dish. Spread the sour cream over the top. Sprinkle with cheese and bake at 350°F for 30 minutes.
