CHICKEN CASSEROLE 
3 c. soft bread cubes (about 5 slices bread)
1 c. cup-up cooked chicken
3/4 c. sour cream
2 tbsp. finely chopped onion
3/4 tsp. salt
1/4 tsp. dry mustard
1 (10 oz.) pkg. frozen chopped spinach, thawed and drained
1 (4 oz.) can mushrooms
1 med. clove garlic, finely chopped
3 eggs, separated
3 tbsp. butter, melted

Heat oven to 350 degrees. Grease 1 1/2 quart casserole. Mix 1 1/2 cups of the bread cubes, the chicken, sour cream, onion salt, mustard, spinach, mushrooms, garlic and egg yolks. Beat egg whites stiff but not dry; fold into chicken mixture.

Pour into casserole. Toss remaining bread crumbs and butter together and sprinkle over chicken. Bake uncovered about 45 minutes.
