FRIED RICE 
3 c. boiled or steamed rice, cold, preferably day old & refrigerated
1 tbsp. soy sauce
1/2 tsp. Accent or monosodium glutamate
Salt & pepper to taste
3 tbsp. oil
2 cloves garlic, minced
1 c. frozen peas
1/2 c. cooked ham or leftover roast, pork, beef or chicken or bacon, finely sliced or combination of these
2 eggs, slightly beaten, cooked & scrambled
3 tbsp. scallions, finely cut

Mix rice, soy sauce, Accent, salt and pepper. Set aside. In hot oil, brown garlic. Add peas and meat. Stir fry a minute or two. Add rice mixture and stir, cook 5 minutes.

Mix in scrambled eggs and scallions. Transfer ton platter. Garnish with strips of scrambled eggs and sprinkle more scallions on top. Surround with sprigs of fresh parsley. Serves 4-6.
