CHICKEN TOSTADA 
1 tbsp. vegetable oil
4 floured tortillas
3 c. shredded lettuce
3 tomatoes
1/2 c. green onions
2 1/2 c. shredded cooked chicken
1/2 c. American cheese (low-fat)

Heat oil in large skillet. Add tortillas one at a time, and cook 1 minute on each side or until thoroughly heated. Cut each tortilla in half.

Divide lettuce evenly on top of 8 tortillas halves. Cut each tomato into 8 wedges and arrange on lettuce. Sprinkle with onions, and top with shredded chicken and cheese. Spoon salsa over each half. 8 servings.
