4 to 6 corn tortillas Oil 1 lb. ground beef 1 (7 oz.) can mild green chili salsa 1 (17 oz.) can refried beans 1 1/2 c. lettuce, shredded 1 to 2 c. med. cheddar cheese, grated 1 or 2 tomatoes, chopped Ripe olives, sliced (small can) 1 1/2 c. sour cream Salsa Casera (picante) or mild green chili salsa Fry tortillas in hot oil, one at a time, until crisp. Drain on paper towels. In skillet, brown beef; drain. Stir in mild green chili salsa. In saucepan, heat refried beans. Spread beans over each tortilla. Top with lettuce, beef, more lettuce, tomatoes, sliced olives, cheese, sour cream and salsa. Garnish with avocado slices, ripe olives and chilies if desired. Makes 4 to 6 servings. |
