SOUTH OF THE BORDER TOSTADAS 
2 lbs. ground beef
1 pkg. taco seasoning
10 corn tortillas
6 oz. pimento cheese
3 tbsp. mayonnaise
1/2 head cabbage

Brown ground beef; drain. Add taco seasoning and set aside. Fry 10 corn tortillas to a crisp; set aside. Mix pimento cheese; add mayonnaise and mix well. Set aside. Shred 1/2 head of cabbage.

On 2 fried tortillas spread pimento cheese mixture. Add beef mixture to one tortilla. Add some cabbage (add finely chopped onion to taste). Cover with the second tortilla.
