CHICKEN-MUSHROOM TOSTADAS 
1 med. onion, cut into wedges
1 clove garlic, minced
1 tsp. oil
2 c. sliced mushrooms
2 c. chopped chicken, cooked
1 c. picante sauce
1 tsp. ground cumin
6 flour tortillas
1/2 sm. red bell pepper, cut into strips
1/2 sm. green bell pepper, cut into strips
3/4 c. shredded Mozzarella cheese

Cook onion and garlic in oil until tender. Add mushrooms, continue to cook. Add chicken, picante sauce and cumin. Simmer uncovered for 10 minutes.

While mixture simmers, broil tortillas until browned. Top with chicken mixture and pepper strips; sprinkle with cheese. Heat in oven until cheese is melted. Serve with picante sauce.
