SWEET POTATO SOUFFLE | |
1 (#10) can or 10 lbs. sweet potatoes (8 c.) 4 oz. butter (1 stick) 8 oz. milk (1 c.) 2 c. sugar 2 c. raisins 10 1/2 oz. marshmallows (4 c.) 1 tsp. nutmeg 1 tsp. cinnamon 1 tsp. ginger Peel and chop potatoes. Boil in water until tender, drain and mash. Measure in large pan, add other ingredients one at a time, stirring well after each addition. Pour in baking pan 12 x 20. Bake at 400 degrees for 45 minutes. Yields 28 servings (4 ounce or 1/2 cup portions) |
