LEMON MUSHROOM SALAD | |
1/2 c. oil 2 tbsp. lemon juice 1/2 tsp. sugar 1/2 lb. fresh mushrooms, sliced 2 c. assorted fresh vegetables such as carrots, zucchini, radishes, beets, cucumbers or sweet potatoes 2 tbsp. chopped green onions 1 1/2 tsp. grated lemon peel Salt and pepper Whisk together oil, onion, lemon juice, and peel, sugar, salt and pepper. Add mushrooms and toss to mix well. Arrange choice of shredded vegetables on a serving platter and top with mushroom mixture or use lemon/onion mixture as a dressing on a mushroom salad or on fish. |
