BAKED PINEAPPLE & CHEESE 
20 oz. can chunked pineapple
1/2 c. sugar
3/4 c. sharp cheese, grated
3 tbsp. all-purpose flour
1/2 c. butter, melted
1/2 c. Ritz crackers, crumbled

Drain pineapple. Keep 3 tablespoons of juice. Combine sugar, flour and stir in 3 tablespoons of pineapple juice. Mix well. Add grated cheese and pineapple chunks; mix well.

Spoon into greased 1 quart casserole dish. Combine butter and Ritz crackers. Sprinkle over pineapple mixture. Bake at 350 degrees for 25-30 minutes or until brown.
