LOBSTER AND ASPARAGUS AU GRATIN 
4 c. soft bread crumbs
1 c. grated Cheddar cheese
1/2 c. melted butter
2 c. cooked asparagus or broccoli
1/2 c. flour
1 tsp. salt
1/4 tsp. pepper
3 c. milk
2 c. lobster, shrimp, chicken or turkey

Mix crumbs, cheese, 1/4 cup butter. Line 2 quart casserole dish with half the crumbs. Arrange asparagus on crumbs. Melt 1/4 cup butter in double boiler. Add flour, salt, pepper and milk. Cook and stir until thick. Add meat to sauce and pour over asparagus. Sprinkle top with remaining crumbs and cheese mixture. Bake at 350 degrees for 1/2 hour. Serves 8.
