BANANA RUM CAKE 
1/2 c. shortening
1 c. sugar
2 c. flour
2 eggs, lightly beaten
2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. vanilla or banana flavoring
1 c. mashed ripe bananas
1 c. light rum
1/2 c. chopped pecans

Cream shortening and sugar well. Add eggs one at a time, beat well after each one. Mix flour, baking powder and soda together and sift several times. Add dry ingredients to creamed mixture alternately with rum. Stir in flavoring, bananas and pecans. Bake at 350 degrees until done, about 45 minutes in a floured and greased tube pan.

RUM FROSTING:

1/3 c. softened butter
3 c. powdered sugar

Mix well until smooth; add enough rum to spread well. Sprinkle with chopped nuts.
