TO BOULI SALAD 
1 c. bulger wheat
1 1/2 c. boiling water
Salt (to taste)
1/2 c. scallions
2 carrots, grated
1 tsp. fresh mint, chopped fine OR 1/2 tsp. dried mint
1 tsp. (heaping) crushed fresh garlic
Pepper (to taste)
1 c. fresh chopped parsley
1/4 c. olive oil
1/4 c. lemon juice
1/4 c. lime juice
2 tomatoes, diced
2 or 3 cucumbers, sliced
1 can garbanzo beans

Combine bulger wheat, boiling water, and salt (if used). Cover and let stand 1/2 hour. Add lemon and lime juices, olive oil, garlic, mint and pepper. Mix well. Add garbanzo beans, parsley, scallions and carrots. Refrigerate. Before serving, add tomatoes and cucumbers. Serve with your favorite crackers.
