CANNED BANANA BREAD 
Supplies needed: 4 wide mouth Ball Can or Freeze pint jars, canning lids and screw bands. Solid shortening, quick bread batter.

Grease the inside of jars well with solid shortening, fill the jars 1/2 full with your favorite quick bread recipe. Place the jars on a cookie sheet and bake them at 325°F for 45 minutes. Remove from the oven and place a hot lid on, screw it down, and jars will seal. Store in freezer for up to 12 months.

Uses for canned bread: Great for a quick dessert or snack. Bread is packaged in small quantities so there won't be leftover bread to dry out.

Bread can be made up when ingredients are on hand, ready to use, I.E. bananas, then frozen until ready to use.

To use, remove lid from jar and thaw for 20 minutes, then microwave, 30 seconds at a time until thawed.

1 cup sugar
2 eggs
1/2 cup nutmeats
2 cups flour
1/2 cup butter
1 tsp. baking soda
3 crushed bananas
Pinch of salt

Cream sugar and butter, add beaten eggs, add soda to bananas and other ingredients.

Since microwave ovens vary in power, you may need to adjust your cooking time.
