ZUCCHINI SQUASH BREAD | |
3 eggs 1 c. oil 1 1/2 c. sugar 2 tbsp. vanilla 2 c. raw, grated, peeled zucchini 3 c. flour 1 tsp. salt 1 tsp. baking soda 1/2 tsp. baking powder 1 tbsp. cinnamon 1 c. raisins 1 c. nuts Beat together first 4 ingredients; add zucchini. Sift together and add dry ingredients, add raisins and nuts. Grease and flour sides and bottom of 2 loaf pans. Divide batter. Bake at 325 degrees for 1 hour. |
