APPLE COFFEE CAKE 
1 1/2 c. all-purpose flour
2 1/4 tsp. double acting baking powder
1/2 c. sugar
1/2 tsp. salt
1/2 tsp. cinnamon
1/4 c. melted shortening11/2 c. chopped tart apples
1 egg
1/2 c. milk

STREUSEL TOPPING:

1/4 c. sugar
2 tbsp. flour
1/2 tsp. cinnamon
1 tbsp. softened butter

Sift flour, measure, resift 3 times with next 4 ingredients. Beat egg; add milk and melted shortening and pour all at once into dry ingredients. Add apples and mix well. Turn into 8 inch well greased square baking pan.

Blend 1/4 cup sugar, 2 tablespoons flour and 1/2 teaspoon cinnamon for Streusel Topping. Work in butter to make a crumbly mixture and sprinkle over batter. Bake in a moderately hot oven (400 degrees) for 30 minutes or until both cake and apples test done. Serves 5.
