CORN CREAM WITH SCALLOPS AND HAM 
Accompany with fruity white wine.

3 tbsp. unsalted butter
8 lg. shallots, thinly sliced
1/2 tsp. sugar
5 c. fresh corn kernels (two 10 oz. pkgs.)
2 1/2 c. Basic Stock (see recipe)
2 c. milk
1 c. whipping cream
1/8 tsp. freshly ground white pepper
Pinch of freshly ground nutmeg
6 oz. cooked ham, cut in 1/4 inch cubes
8 oz. sea scallops, quartered
1/2 c. corn kernels
