HAM WITH SCALLOPED CORN 
1 (17 oz.) can cream-style corn
1/4 c. chopped green bell pepper
2 tbsp. butter
2 tsp. instant minced onion
2 eggs, beaten
1 c. diced fully cooked smoked ham
1/2 c. shredded Cheddar cheese (2 oz.)
1/4 tsp. salt
1 c. crushed crackers

Mix corn, bell pepper, butter and onion in 2 quart microwavable casserole. Cover tightly and microwave on high 1 minute, 30 seconds to 3 minutes or until corn is hot; stir. Quickly stir in eggs. Stir in ham, cheese, salt and half of the crackers.

Cover loosely and microwave on medium-high (70%) 2 minutes; stir. Sprinkle with remaining crackers. Cover loosely and microwave 4 to 6 minutes or until center is set. Sprinkle with paprika if desired.

Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
