HAM AND POTATO SCALLOP 
1 1/2 lbs. potatoes
1/4 c. grated onion
1/4 c. chopped green pepper
3 tbsp. butter
3 tbsp. flour
1 tsp. salt
1/8 tsp. pepper
1/2 tsp. dry mustard
1 1/2 c. milk
1 c. grated Sharp cheese
1 1/2 c. diced cooked ham

Peel and slice potatoes. Saute onion and pepper in butter. Blend in flour and seasonings. Gradually add milk, cooking and stirring until sauce is thickened. Blend in 3/4 cup cheese. Alternate sliced potatoes, ham and cheese sauce in buttered 2 1/2 quart casserole. Cover and bake 1 hour at 350 degrees. Uncover and sprinkle with remaining cheese, bake 15 minutes more. Serves 5 to 6.
