CURRIED RICE SALAD WITH PEAS 
4 c. cooked rice
2 c. frozen peas
1/2 c. green onions, chopped
1/2 c. fresh mint, chopped
1/3 c. lemon juice
1/2 c. oil
2 tsp. curry powder
1/2 tsp. turmeric
2 carrots, cut into sm. pieces

Combine rice and vegetables and mint. Combine oil, lemon and spices toss with rice. Refrigerate, serve with chunks of raw cabbage.
