MILLIE'S SPAGHETTI SAUCE | |
1 med onion, diced 2 med. carrots, shredded 2 sticks celery, diced 1 tbsp. parsley flakes 1 lg. or 2 sm. garlic cloves, minced 1 sm. green pepper, diced 1 lg. pork hock 2 cans tomato sauce 3 tomato sauce cans of water 1 can tomato paste 1 tsp. each rosemary, basil, and nutmeg 1/4 tsp. cinnamon 1/4 tsp. allspice 1 tbsp. sugar 2 lg. bay leaves Pinch of sage 8 chili peppers, optional Hamburger for meatballs Pasta Make meatballs from the hamburger and set aside. (You can brown the meatballs if you wish, but they cook very well if added to the sauce raw.) Combine all ingredients except meatballs and pasta and cook at least 8 hours. Add the meatballs to the sauce and cook until they are done. Serve over prepared pasta. Do not use the 8 chili peppers unless you like a hot spaghetti sauce! |
