DIABETIC COOKIES 
1/2 c. quick cooking oatmeal
1/2 c. flour (whole wheat may be used)
1/4 tsp. baking soda
Pinch salt, optional
3 tbsp. shortening
1 tbsp. milk or enough to make dough rollable
1 tsp. Sweet n Low (liquid)

Work in shortening as for pie crust. Add milk and Sweet n Low. Roll out and use cookie cutter. Bake at 325 degrees for 15 minutes. Makes about 18.
