RAISIN COOKIES (DIABETIC) 
1 1/4 c. water
3/8 c. butter (or salad oil)
2 c. seedless raisins
2 tsp. cinnamon
1/2 tsp. nutmeg
2 eggs
1 tsp. baking soda
1 tsp. salt
2 tsp. liquid sweetener (I use 4 packets Sweet 'n Low)
2 c. flour
1 tsp. baking powder
1/3 c. walnuts (opt.)

Combine 1 1/4 cups water, oil, raisins, cinnamon and nutmeg. Boil together for 3 minutes; let cool. Beat eggs and add salt, soda and sweetener which has been dissolved in 2 tablespoons water. Stir into raisin mixture. Sift flour and baking powder together and blend into mixture. Add chopped nuts. Drop from teaspoon. Bake at 375 degrees until lightly brown.
