RAISIN SPICE COOKIES FOR
DIABETICS
 
2/3 c. water
1/4 c. shortening
1 c. raisins
1/4 tsp. nutmeg
1 tsp. cinnamon
2 packets Sweet `n Low
2 tbsp. water
1 egg
1/2 tsp. baking powder
1/4 tsp. salt
1 c. all-purpose flour

Combine water, shortening, raisins, nutmeg and cinnamon in saucepan. Boil 3 minutes. Cool, until pan is just warm on the bottom.

Combine Sweet `n Low and water with mixture. Add eggs; beat well. Then add remaining ingredients and mix thoroughly. Drop by spoonfuls onto a well greased cookie sheet. Bake at 350 degrees for 8-10 minutes.
