ISLAND BROILED OR BAKED CHICKEN 
1/2 c. salad oil
3 tbsp. lemon juice
1 1/2 tbsp. soy sauce
1 sm. clove garlic, minced
1/2 tsp. dried oregano leaves, crushed
2 lb. broiler fryer chicken or 4 to 5 chicken breasts, skin removed
1/4 tsp. salt
1/8 tsp. pepper

Combine first 5 ingredients and salt and pepper for marinating sauce. Marinate overnight, turning chicken often.

To Broil: Broil 5 to 7 inches from heat until lightly browned, about 25 minutes. Brush occasionally with marinade sauce.

To Bake: 45 to 50 minutes at 350 degrees, covered. Uncover last 15 minutes.
