ITALIAN SAUSAGE 
In skillet, put enough water to just cover bottom. Add 1/4 cup oil. Place 1 package (about 1 to 2 pounds) sausage in skillet. Over medium heat, cook sausages until no longer pink. Turn sausage around to completely steam. When water evaporates, cook sausages until browned on all sides. May need to add more oil.

At this point the sausages can be transferred to a pot of spaghetti sauce to be eaten as a side dish.

For sandwiches, in separate skillet, place about 2 to 3 medium onions, peeled and sliced vertically and 2 to 3 green peppers, cleaned and sliced vertically. Add small amount of water, salt and pepper to taste, and 2 to 3 tablespoons sugar. Cover; steam over low-medium heat until peppers and onions are cooked through. Add cooked peppers and onions to sausage in skillet; mix well. Serve on Italian roll with some spicy mustard on both sides of roll.
