GREAT-GRAM-MOM'S POTATO STUFFING 
2-3 tbsp. butter
5-7 lbs. potatoes, diced
4 onions, diced
Celery to taste, cut up
Poultry seasoning, to taste
2-3 eggs
3-4 slices white bread
Pepper to taste
Salt

This recipe will fill a 10-15 pound turkey. Use butter in large frying pan - add onions, celery seasoning, pepper, salt (to taste). Cook together until potatoes are soft. Beat eggs and add to mixture. Break up bread in small pieces. Add. Keep stirring with flipper all the time. Prevents sticking.

This must be fully cooked as it does not cook in turkey. Can be made day ahead. In fact it tastes better if left to stand a day or two in refrigerator. There are no firm measurements. This recipe is on its third generation. I have adapted it to my family.
