CREAMY LEMON SPINACH 
10 oz. pkg. frozen spinach
1 (30 oz.) pkg. (lite) cream cheese
1 tbsp. butter
1 tbsp. lemon juice
1 tsp. zest of lemon
1/4 c. dry bread crumbs
1/4 c. Parmesan cheese
Tarragon and white pepper to taste

Cook spinach according to directions. Combine in food processor. Sprinkle with bread crumbs and cheese. Bake at 350 degrees for 25 minutes. Serve hot.
