UNCOOKED FRESH TOMATO SAUCE FOR
PASTA
 
3 c. diced ripe tomatoes
2 tbsp. minced scallion or onion
1 clove minced garlic
1 tbsp. olive oil
Salt and coarsely ground pepper to taste
2-3 tbsp. chopped fresh basil

Cook pasta, pour into strainer. Put onion, garlic and olive oil into pasta pot and cook until soft. Remove from heat. Stir in remaining ingredients. Return drained pasta to pot and toss gently. Makes enough for 8 ounce of pasta.
