TURKEY RICE CASSEROLE 
1 c. rice
2 cans cream of mushroom soup
2 cans water
Turkey or chicken (1 c. or more)
1 sm. onion, chopped

Mix. Bake, covered for 1 hour at 350 degrees. May be topped with cheese or potato chips 10 minutes before done and left uncovered to brown.

I used leftover Thanksgiving turkey for this recipe. It took longer to prepare than the 1 hour suggested when using a gas oven in a 9x13 Pyrex dish. Add about 10 more min., if you don't want it runny. We added mushrooms to this dish, as well as sprinkled with shredded cheddar cheese. I also used white, long grain rice. Overall a pretty decent meal on a dime. The whole meal cost me less than $5 (not including the turkey), and took 5 min. to make (not including cook time). Definitely would make this again!
