LEMON CHIFFON PIE 
Juice and rind of 1 lemon
2 tbsp. cold water
Yolks of 3 eggs, beaten
1/2 c. sugar

Cook in double boiler until like heavy cream, cool.

Beat 3 egg whites until dry. Add 1/2 cup sugar and fold all ingredients together. Place in baked crust and brown in oven, 10-15 minutes, 350 degrees.
