SPINACH ORANGE CHICKEN SALAD 
2 c. diced, cooked chicken
1 (10 oz.) pkg. raw spinach, torn into pieces
2 oranges, peeled and cut into 1/2 inch pieces
1 sm. red onion, thinly sliced
2 tbsp. coarsely chopped walnuts
Orange Dressing (recipe to follow)

In a small jar with tight fitting lid, place 2 tablespoons each white vinegar and vegetable oil. Add 3 tablespoons fresh orange juice, 1/2 teaspoon dry white mustard, 1/4 teaspoon ginger, 1/8 teaspoon salt and 1/8 teaspoon pepper. Cover and shake well. Makes 1/3 cup.

In salad bowl, place spinach, chicken, oranges, onion and nuts. Toss to mix. Add dressing and toss to coat. Serve immediately.
