FLORENCE'S RICE PUDDING 
1 qt. milk
1/2 c. sugar
1/2 c. rice, uncooked
1/2 tsp. salt
1 egg
1 tsp. vanilla
Cinnamon

Combine milk, sugar, rice and salt in a heavy saucepan. Cook at a low boil, stirring constantly until the rice "grows" cooked and the mixture is thick. In a small bowl, combine egg and vanilla. Quickly add to rice mixture, being careful not to wind up with "scrambled eggs". Pour into serving bowl and dust with cinnamon, refrigerate. Recipe can be doubled.

My mother made this creamy custard. Young and old like it a lot.
