EVELYN'S GREEK SALAD 
6 to 10 Roma tomatoes
1 English cucumber (peeled)
1 green pepper (or red or yellow)
1/2 onion
olives (if you want)
1 tbsp. olive oil
2 tbsp. apple cider vinegar
1 1/2 tsp. salt
1/2 tsp. black pepper
1 1/2 tbsp. Greek seasoning (I use "Club House")
feta cheese, for sprinkling

Cube tomatoes, cucumber and green pepper. Dice onion into pretty small pieces. Put it all in a bowl with olives. Pour oil and vinegar over vegetables. Sprinkle salt, pepper and seasoning over vegetables. Mix it all up! Let sit in refrigerator until ready to serve.

Drain liquid, sprinkle desired amount of feta cheese over salad. Serve with warm pita bread or your favorite meal! ENJOY!
