PEACH UPSIDE - DOWN CAKE | |
1/4 c. butter, melted 1/3 c. firmly packed light brown sugar 1 can (29 oz.) sliced peaches, well drained 1 pkg. (2 layer) yellow cake mix or pudding inc. cake mix 1 pkg. (4 serving) Jello instant pudding, vanilla 4 eggs 1 c. (1/2 pt.) sour cream 1/4 c. oil 1/2 tsp. almond extract (optional) Combine butter and brown sugar. Pour into 13 x 9 inch pan. Arrange peaches in rows on sugar mixture. Combine remaining ingredients in large mixer bowl. Blend then beat at medium speed of electric mixer for 4 minutes. Spoon over peach slices in pan. Bake at 350 degrees for 50-55 minutes. Cook in pan 5 minutes. Invert. |
