PEACH UPSIDE DOWN CAKE | |
1 1/4 c. sifted cake flour 1 egg, well beaten 1/4 tsp. salt 3/4 c. granulated sugar 1/2 c. milk 4 tbsp. softened butter 1 1/4 tsp. baking powder 1 tsp. vanilla 4 tbsp. butter 1/2 c. brown sugar 2 c. sliced peaches (fresh or canned Elberta) Drain fruit well. Sift flour once and measure. Then add baking powder, salt, sugar and sift together with flour three times. Add butter. Combine egg, milk and vanilla. Add to flour mixture, stirring until all the flour is damp; then beat one minute. Melt 4 tablespoons butter over low flame. Add brown sugar and stir until melted. Pour this in a square baking pan. On this, arrange the peach slices. Pour the batter over the peaches. Bake in 350 degree oven for 50 minutes or until done. (Canned pineapple, cooked apricots, or sliced apples may be used.) |
