PEANUT BUTTER BALLS | |
1 (12 oz.) pkg (2c.) Nestle's Toll House peanut butter morsels 1/3 c. evaporated milk 1/4 c. butter 2 eggs, slightly beaten 1 tsp. vanilla extract 2 c. sifted confectioners' sugar 1 (3 1/2 oz.) can (1 1/3 c.) flaked coconut, divided 1 c. chopped peanuts, divided Combine over hot (not boiling) water, Nestle's Toll House peanut butter morsels, evaporated milk and butter. Stir until morsels are melted and mixture is smooth. Stir in eggs; cook 2 minutes longer. Blend in vanilla extract and confectioners' sugar. Stir in 3/4 cup coconut and 1/2 cup peanuts. Transfer to large bowl. Chill until firm enough to handle (about 2 hours). Using 1 rounded teaspoon, shape into balls. In small bowl, combine remaining coconut and peanuts. Roll balls into nut mixture. Place on waxed paper-lined cookie sheets. Chill until firm (about 1 hour). Makes about 3 1/2 dozen candies. |
