NINAH'S YUMMY YAMS 
6 large yams peeled cute into tbs (table spoon) sized portion
2 c. (4 sticks) butter, sliced to evenly distribute throughout yams
4 tbsp. nutmeg
2 cups light brown sugar
2 cups dark brown sugar
4 cups white sugar
1 tsp. Vanilla
4 cups of boiling water to start with

On a high heat: In a large pot with 4 cups of water add in yams, add in half stick of butter, 1 tablespoon nutmeg, vanilla 1 cup of light brown sugar along with 1 cup of dark brown sugar and 1 cup of white sugar.

As the yams begin to soften, turn fire down to simmer add more of each ingredient, to taste, add water as needed. Allow yams to slowly cook.

Total processing/cooking time approximately 2 hours.
