SAVORY GOAT CHEESE BALL 
8 to 12 oz. goat cheese (enough to make ball)
1/2 to 1 tsp. fresh lemon zest (from one lemon)
1/2 to 1 tsp. fresh or dried rosemary (or to taste)
1/2 tsp. fresh or dried thyme
1/2 tsp. sea salt (or to taste)
1 tsp. fresh cracked pepper (or to taste)
1 tbsp. olive oil (I use first press organic)
chopped pecans, for rolling

Mix all ingredients but chopped pecans in food processor until smooth (can add small amount of water if needed).

On wax paper square, form cheese ball. On fresh wax paper square, spread pecans, roll ball and refrigerate for at least 4 hours or firm.

Place on cheese tray drizzle olive oil and sprinkle with sea salt.

Serve with flatbread or Triscuits! YUM!
