1 (19 oz.) can crushed pineapple with juice 2 c. granulated sugar 2 eggs 2 c. flour 2 tsp. baking soda 1 tsp. vanilla 1 c. chopped nuts (pecans, walnuts, Brazil) Mix ingredients 1 minute by hand (may be lumpy). Pour into greased 9x13 pan. Bake at 350 degrees 45 minutes. ICING: 1 (8 oz.) pkg. warm cream cheese 1/2 c. butter 1 1/3 c. confectioners' sugar 1 tsp. vanilla Mix all ingredients with an electric mixer until smooth. Put icing on cake while still warm (not hot). Leave in refrigerator for 2 days before serving. |
