BUTTERNUT CAKE 
1 c. butter
2 c. sugar
3 c. flour
4 eggs
1/2 tsp. salt
1 c. buttermilk
3 tsp. baking powder
2 tsp. butternut extract

Cream butter, sugar and add egg yolks. Add flour and buttermilk alternately, add extract. Fold in stiffly beaten egg whites. Bake in 4 (9") cake pans at 350 degrees for 25 minutes. Frost cake with cream cheese icing.
