LEMON POPPY SEED MUFFINS 
1/2 c. butter
2 c. sugar
2 eggs
1 pt. sour cream
2 tsp. baking soda
2 c. flour
Grated rind of 1 lemon
2 1/2 tbsp. poppy seeds
Juice of 1 lemon
1/4 c. sugar

Cream butter and sugar. Add eggs and mix well. Add soda to sour cream. Blend into sugar mixture alternately with flour. Mix in lemon rind and poppy seeds. Fill greased or paper-lined muffin tins 2/3 full.

Bake at 350°F. for 20-30 minutes.

Mix lemon juice and sugar. Drizzle over muffins. Let cool before removing from pans.

Yield: about 24 muffins.
