GNOCCHI 
3 c. flour
2 lbs. Ricotta cheese
1 egg
2 tbsp. oil

Form well with flour on table or pasta board. Place remaining ingredients in well. Mix until well blended. Add more flour if needed so dough is soft but not sticky. Cut small piece off and on lightly floured surface, roll dough into long strip about 1 inch diameter. Cut into 1 inch pieces.

Boil in rapidly boiling water (salt and drop of oil added). When they all rise to surface remove with a slotted spoon and serve in spaghetti sauce. NOTE: As you cut dough into 1 inch pieces you can sprinkle flour lightly over cut pieces to prevent them from sticking to each other.
