GNOCCHI 
Mix up 2 cups of instant mashed potatoes and mix in 3 eggs. Refrigerate mixture. Put a mound of 3 cups flour on table. Place chilled mixture in the center of the flour well and start to knead until you have a texture you like.

Cut dough into sections and roll into snakes. Cut "snakes" into pieces and roll pieces into flour and white cornmeal so that they don't stick together. (Pieces should be approximately 1 inch in length.)
