1 lb. sausage
1/2 c. chopped onion
1/2 c. chopped green pepper (optional)
2 tbsp. flour
2 pkg. (8 1/2 oz.) corn muffin mix
1 (6 oz.) can tomato paste
1 tsp. salt
1 tsp. chili powder
4 oz. Cheddar cheese, cut in 1/2" cubes (optional)

Preheat oven to 400 degrees. Brown sausage and onion in skillet. Drain off fat and add tomato paste, flour, salt and chili powder. Remove from heat and stir in cheese cubes. Spread mixture in 9 inch square pan.

Prepare corn muffin mix and spread over top of sausage. Bake 30-35 minutes. Let stand for 5 minutes in pan and turn onto plate. Serve immediately! Serves 6.
